Mole verde

Ingredients

  • 4 pieces chicken
  • 60 grams peanuts
  • 100 grams pumpkin seed
  • 80 grams lettuce
  • 150 grams spinach
  • 1 bunch epazote
  • 1 bunch cilantro
  • 1 parsley bunch
  • 1 poblano chili
  • 1 serrano chili
  • 400 grams green tomato
  • 100 grams onion
  • 1 clove garlic
  • 1 pinch cumin
  • Salt
  • 20 ml vegetal oil

Instructions

  • 1) Cook the chicken in salted water
    2) Roast the nuts
    3) Grind the green leaves
    4) Add the nuts and continue grinding
    5) Cut the chilis and add to the mixture
    6) Cut the green tomatoes, onion and garlic clove. Incorporate the rest of the ingredients and blend
    7) Season with cumin and salt
    8) In a frying pan, heat the oil
    9) Cook the mixture until it condenses without stopping remove with a wooden spoon
    10) Serve the chicken and add "the mole"
